Palak Paneer Lifafa Paratha

Servings – 3

INGREDIENTS
Whole Wheat flour – 220 grams
All purpose flour – 80 grams
Salt – 1/2 teaspoon
Oil – 2 tablespoons
Water – 140 milliliters
Water – 800 milliliters
Spinach – 60 grams
Grated paneer – 150 grams
Grated mozzarella cheese – 50 grams
Onions – 70 grams
Green chili – 1 teaspoon
Salt – 3/4 teaspoon
Chaat masala – 1/2 teaspoon
Garam masala – 1/2 teaspoon
Coriander – 1 tablespoon
Whole wheat flour – 2 tablespoons
Water – 30 milliliters
Whole wheat flour – for dusting
Oil – for brushing

PREPARATION
1. In a bowl, add 220 grams whole wheat flour, 80 grams all purpose flour, 1/2 teaspoon salt, 2 tablespoons oil and mix it well.
2. Add 140 milliliters water and knead it into a dough. Rest for 30 minutes.
3. Take a pan, add 800 milliliters water, 60 grams spinach and blanch for 2 – 3 minutes.
4. Remove it from heat and strain it.
5. In a bowl, add 150 grams grated paneer, blanched spinach, 50 grams grated mozzarella cheese, 70 grams onions, 1 teaspoon green chili, 3/4 teaspoon salt, 1/2 teaspoon chaat masala, 1/2 teaspoon garam masala, 1 tablespoon coriander and mix it well.
6. In a bowl, add 2 tablespoons whole wheat flour, 30 milliliters water and mix it well.
7. Dust some whole wheat flour on a clean surface.
8. Take a ball from prepared dough and make it flatten with the help of rolling pin.
9. Add prepared stuffing on it and fold it. (See video)
10. Brush the edges with prepared slurry and fold it.
11. Dust some whole wheat flour on it and make it flatten with the help of rolling pin.
12. Place it on a hot tawa and brush it with oil.
13. Cook from both sides and remove it from heat.
14. Place it on a board and cut it into pieces.
15. Serve.
