Delicious and nutritious addition to your winter recipe bank. These baked eggs are a simple way to introduce more protein into your diet and start your day right.
Serves 2
Prep time: 10 mins Cook time: 20 mins
Ingredients
• 4eggs
• 1 red onion, diced
• 1 red pepper, deseeded and diced
• 1 red chilli, deseeded and finely chopped
• 2 garlic cloves, crushed
• 2 x 400g tins of chopped tomatoes
• 1⁄2 tsp sweetener
• 2 tsp paprika
• 1 tsp cumin
• Handful of fresh coriander, chopped
• Salt and pepper
• Low calorie oil spray
Method:
1. Heat low calorie oil spray in a frying pan.
2. Gently fry onions, chilli, garlic and red pepper for 5 mins until soft.
3. Stir in the tomatoes, sweetener, paprika and cumin.
4. Simmer for 8-10 minutes until thickened.
5. Make four indentations in the sauce using the back of a spoon to crack the egg into.
6. Season to taste.
7. Place lid on pan and cook for 6-8 mins on a low heat.
8. Scatter with the coriander leaves and serve.
