Ingredients:
2 cups white urad dal (split white gram)
2-3 green chilies, chopped
Green Dhaniya (coriander), chopped
1/2 tbsp Zira (cumin seeds)
1-inch piece of ginger, chopped
A handful of curry leaves, chopped
1 medium-sized onion, finely chopped
Salt to taste
Oil for deep frying
4-5 tbsp Rice Flour
Instructions:
Begin by soaking the white urad dal in water for at least 4-5 hours or overnight. This process softens the lentils, making them easier to grind.
Once soaked, drain the water completely and transfer the urad dal to a blender or wet grinder.
Grind the urad dal into a smooth, thick batter. You may need to add a little water to achieve the desired consistency.
Transfer the batter into a mixing bowl. Add chopped green chilies, ginger, chopped green dhaniya, chopped curry leaves, chopped onion, zira (cumin seeds), salt to taste, and rice flour. Mix well until all ingredients are combined.
Heat oil in a deep frying pan or kadai over medium heat.
Wet your hands with water to prevent sticking, take a small portion of the batter, and shape it into a round disc with a hole in the center, resembling a doughnut.
Gently slide the shaped vada into the hot oil. Fry them in batches, making sure not to overcrowd the pan.
Fry the vadas on medium-low heat, flipping occasionally, until they turn golden brown and crispy on all sides.
Once done, remove the vadas from the oil using a slotted spoon and drain excess oil on paper towels.
Serve hot with coconut chutney or sambar for an authentic South Indian experience.
