Fill your soul with the warmth of Indian cuisine-Traditional Besan Kali Curry
Ingredients
Besan- 1 cup
Turmeric powder- 1/2 tsp
Red chilli powder – 1 tsp
Water – 1.5 cup Salt to taste
For curry:
Onion roughly chopped – 2
Tomato roughly chopped – 2
Garlic cloves- 8-10
Turmeric powder- 1/2 tsp
Red chilli powder – 1 tsp
Coriander seeds- 1 tbsp
Cumin seeds- 1 tsp
Bay leaves -6-7
Red chillies -3-4
Black salt powder -1/2tsp
Coriander leaves – 100 gm
Salt to taste
Mustard Oil- 100 ml
Water -1 Cup
How to
For the besan katli- Take besan, salt, red chilli powder, turmeric powder, add 1.5-2 cups of water in intervals, stir until lumps disappear and prepare their batter.
Preheat the frying pan and heat the oil in it. Add cumin seeds and then the batter. Cook it on medium flame while continuously stirring it until it is thick. Take a plate and grease the back of it with some oil, then take the batter and spread it on the plate. Allow it to set for 10 minutes. Cut the spread into pieces. To fry the katli, take a wok and fry the pieces until the katli turns little red. You can wait until it turns crispy. Keep it aside, as now it’s time for curry.
For curry-
Prepare a paste of tomatoes, onion, green chillies, coriander seeds, garlic, coriander leaves, black pepper powder and cumin. Take a pan and preheat it. Add oil, cumin seeds, bay leaves, red chilli, allow it splutter. Now add the paste, red chilli powder, coriander powder, Deggi mirch and roast until oil separates from it. Turn the flame to medium. Add 1 cup of water and Stir until the gravy boils properly. Turn off the gas. Take the gravy and put it in the serving bowl. Add pieces of cut kalti and garnish it with finely chopped green coriander.
