For the Chocolate Brownie cake
• 100 g chopped dark chocolate
• 113 g unsalted butter (1/2 cup)
• 100 g granulated sugar (1/2 cup)
• 110 g brown sugar (1/2 cup)
• 1 tsp vanilla extract
• 2 large eggs
• 1/4 tsp salt
• 130 g all-purpose flour (1 cup)
• 1/4 tsp baking soda
For the Ganache:
• 170 g chopped chocolate (1 cup)
• 180 ml all-purpose cream or heavy cream (3/4 cup)
• 1 tsp unsalted butter
• Chopped nuts of your choice for topping( peanuts ,cashew, walnuts, almond)
Preparation Steps:
1. Prepare the Brownies:
o Preheat your oven to 180 degree(10 minutes) Grease and line an 8×8 inch baking pan with parchment paper.
o Double boil or microwave the unsalted butter and chopped dark chocolate until melted. Stir until the chocolate mixture completely smooth and set aside to cool slightly.
o Combine the granulated sugar, brown sugar to the chocolate mixture and make sure it completely dissolved before moving to the next step
o Add the eggs one at a time, beating well after each addition add vanilla essence mix all together
o Sift together the flour, salt, and baking soda, then fold into the wet ingredients until just combined. Add the chopped chocolate chunks and fold it gently
o Pour the batter into the prepared baking pan and smooth the top.
o Bake for 25-30 minutes or until a toothpick inserted into the centre comes out with a few moist crumbs.
o Let the brownie cake cool completely in the pan on a wire rack.
2. Prepare the Ganache:
o Heat the all-purpose cream or heavy cream in a saucepan over medium heat until it just begins to simmer.
o Pour the hot cream over the chopped chocolate .
o Stir until the chocolate is completely melted and the mixture is smooth.
o Add the unsalted butter and stir until fully incorporated.
3. Assemble:
o Once the brownies are completely cooled, Flip the cake upside down for an even texture and pierce with a toothpick for easy absorption of ganache and pour the ganache over the top. This will make cake more moist and soft
o Spread evenly with a spatula.
o Sprinkle chopped nuts of your choice on top for added crunch. Chill it for 1-2 hrs
o Let the ganache set before cutting into squares.
